An Argentine tradition of open fire cooking, gaucho style — pop-ups and private events.
As a second theme to the BUENOS AIRES BISTRO concept, de CAMPO takes us back to the origins of traditional Argentine cuisine: in the countryside with a wood-burning fire and nature’s elements.
Using a variety of techniques ranging from la parrilla, chapa, asador de cruz, infiernillo, and over embers or flames, we work with large pieces of meat, fish or poultry and cook over several hours — a setup rarely seen outside of South America, guaranteed to be a feast for the eyes and palate.

“They catered my wedding and people just loved their food – homemade argentine sausage, flank steaks, grilled fish and grilled vegetables. Highly recommended!”
Sweetbreads Like No Other
“I used to say that I don’t like sweetbreads, until I tried how Mariano makes them – I’m now a convert!”
“Totally did not expect to get seconds on the sides of veggies. Don’t know what they do to them but they were fantastic!”
